Arctic Char drying on a 2x4 on a house in Clyde River on baffin Island. It's up high out of reach of any children or dogs looking for a snack. It's a traditional Inuit food called pitsi, which is essentially fish jerky. The fish is caught filleted and both halves are left attached at the tail. It's turned inside out and cubed (without breaking the skin) and hung in the cool dry arctic air.
